- 2 boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 3 cups fresh broccoli florets
- 3 cloves garlic, minced or sliced
- 1 lemon (zest and juice)
- 2 tablespoons olive oil
Instructions
- Preheat oven to 425°F (220°C).
- Cut chicken and broccoli into bite-sized pieces.
- On a sheet pan, toss chicken and broccoli with olive oil, lemon juice, zest, and garlic.
- Spread into an even layer and roast for 20–25 minutes, flipping halfway through.
- Serve as is, or over rice, quinoa, or cauliflower mash. Great for meal prep too!
Notes
This dish is ideal for busy nights or meal prep. Optional add-ons: red pepper flakes, parmesan, or a splash of soy sauce for extra flavor.
