Ingredients

  • 2 boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 3 cups fresh broccoli florets
  • 3 cloves garlic, minced or sliced
  • 1 lemon (zest and juice)
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cut chicken and broccoli into bite-sized pieces.
  3. On a sheet pan, toss chicken and broccoli with olive oil, lemon juice, zest, and garlic.
  4. Spread into an even layer and roast for 20–25 minutes, flipping halfway through.
  5. Serve as is, or over rice, quinoa, or cauliflower mash. Great for meal prep too!
