- 2 cups cooked shredded chicken (rotisserie or leftovers)
- 1½ cups chopped broccoli (fresh or thawed frozen)
- 2 cups cooked rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, broccoli, rice, cream of chicken soup, and half the cheese.
- Mix thoroughly and transfer to a greased 9×13 casserole dish.
- Sprinkle remaining cheese on top.
- Bake for 25–30 minutes, until hot and bubbly with a golden top.
Notes
Use fully cooked rice and well-drained broccoli to avoid a watery casserole. Add crushed crackers or breadcrumbs for crunch, or swap in cauliflower rice for a low-carb version.
