Ingredients

1 medium onion, diced
1 bell pepper, chopped
1 can (15 oz) diced tomatoes
1 can (15 oz) black or kidney beans, drained
1 tbsp chili powder
Instructions
1. Sauté onion in a large pot over medium heat for 2–3 minutes until translucent.
2. Add bell pepper and cook for another 2–3 minutes.
3. Stir in diced tomatoes and beans.
4. Add chili powder and mix well.
5. Simmer uncovered for 15–20 minutes, stirring occasionally. Serve warm.
Notes
Use fire-roasted tomatoes for extra depth.
Mash a few beans at the end for a thicker chili.
