- 1.5 cups vegetable broth or water with seasoning
Instructions
- Rinse the rice under cold water.
- Add rice, beans, diced tomatoes (with juice), chopped onion, and broth to the Instant Pot.
- Stir well to combine ingredients.
- Close the lid, set the valve to sealing, and cook on high pressure for 8 minutes.
- Allow natural pressure release for 10 minutes, then quick release any remaining pressure.
- Stir and serve as-is, or customize with your favorite toppings like cheese, hot sauce, or avocado.
Notes
To boost nutrition, feel free to add spinach, zucchini, or corn. Avoid adding dairy before cooking to prevent curdling.
